This is where the baking and cooking happens. For our own guests, for PAME at Brown Boveri Platz, and for cafes and restaurants in Baden.
At Bruggerstrasse 69, the light goes on long before any shop in Baden opens. The bakery is in full swing: croissants, pain au chocolat, pain aux amandes, cinnamon buns, sourdough bread. Laminated, proofed, and baked by our own bakers. Flour from Lindmühle in Birmensdorf, brioche flour from Tigel, Swiss eggs and butter. No frozen dough, no pre-mixes, nothing bought in.
At 7:30 AM, the coffee window opens. For two hours, we serve coffee and pastries straight to the street for everyone heading to the office on Bruggerstrasse. Beans from UNO, roasted in the region. We also serve it the Greek way over ice, as freddo espresso and freddo cappuccino.
From 11:00 AM, the kitchen cooks lunch. A different dish every day, plus a vegetarian option. We cook just like you do at home: one pot, time, meat from Switzerland, and seasonal vegetables. Braised dishes take hours; sauces and dressings are created in the very same kitchen—none of it comes from a tin.
The result is food that reminds you of how things used to taste. It fills you up without feeling heavy. You go back to work afterward, not into a food coma.
At 2:00 PM, the restaurant closes, but the kitchen doesn’t. For catering and events, we make meze: hummus with tahini that we roast and grind ourselves from sesame seeds, tzatziki, pickles,
apéro platters, and pinchos. Here at our place, in your office, or wherever your event takes place.
